These days they make some very nice profiles in the 190/200 range, and they steer pretty much as sweet as a 180. A lot of 600 racers lever 190/200's onto their 5.5" rims, the shape is a little wonky, but they do make use of the larger contact patch.
I have an old 200/60 Pirelli Superbike slick on the 6" rear of my 851/926 racer project. There is approx 5-6mm clearance to the chain. The only issue appears to be the lip of the hugger with the axle pushed all the way back. It's not touching just pushing it around the shed but I suspect it would with tyre growth at speed, and no way can I get a tyre warmer between tyre and hugger.
