The handling of the 851/888'S feels positivly rapier like when compared to the old Bevel 750/900 SS twins, but both types have their own charm and are FUN to ride.
IME almost any well ridden bike will give more modern but poorly ridden bikes a good run for their money, it's hanging onto the buggers down the straights in the hope of being close enough to embarrass them on the brakes/through the corners that's the problem when you're playing with older tackle with a lot less power.
Many years ago now I built a Harris framed Kawasaki Z1 with a 1100 big bore kit, Moriwaki cams and 29mm smoothbores etc to World Endurance Race spec for a friend, we took it down to Brands Hatch to run it in on the short circuit, there was a guy on an old single running rings around my friend, now even at running in revs he should have pissed all over this single, my friend complained that the old man on the single keeps coming by me in the corners and getting in the way
So I wandered down the paddock to have a look at the old single/see if I knew the rider...
It turned out to be John Surtees riding his ex factory Vincent Grey Flash.
